It’s a wrap!

So this is the end of the blog! My first blog at that. Sure, I have a Facebook account but that is completely different from blogging. I thought that I was up to date on technology and all of the new ways for people to promote themselves but I guess I was wrong. I as introduced to the world of storify and twitter, yes I knew about it but I didn’t really like it. I like the idea of promoting yourself with a blog best of all of the other mediums out there. I like the ideao of creating a blog with examples of my work, an online resume if you will, that I can email out to potential employer.

Where I got the 4 dozen eggs that are in my fridge….

My parents have a mini farm going on at their house! In this viedo you’ll get to see fifty chickens and 4 turkeys. We also have 5 dogs and are in the process of bringing over 2 cows. Plan is that my family lives comfortably if there happens to be a zombie apoclypse. (Soon I’ll be getting all of my produce from our garden.)

Recipe for Wing Stop Fries!

Come on, everyone loves these fries! Granted they’re not McDonald’s fries, they’re still pretty great, if not better. You can look around online all you want for a recipe for these fries and they’re all different, but the same aswell. The secret is two things: Sugar and Season salt. Season salt. That’s the problem. There are so many different brands and everyone has their favorite kind and there lies the variation in this recipe.

To see how to make the fries step by step, keep an eye out for a video I’ll be posting soon with detailed instructions!

For now all you’ll need to know is the ingredients to making these fries. Sliced potatoes, about 4 quarts of oil, and equal parts season salt and sugar. *This is Key*

Pizza Dough Recipe

Ingredients
3 1/2 to 4 cups bread flour, plus more for rolling (Chef’s Note: Using bread flour will give you a much crisper crust. If you can’t find bread flour, you can substitute it with all-purpose flour which will give you a chewier crust.)
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Directions

Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Soft Preztels

A few months ago I came across a great deal on craigslist and gave in. A woman in Wimberly was moving and sold me her Kitchenaid mixer for $125 which is a steal since it’s over $400 retail so I was pretty happy. One of my favorite things to make with it is soft pretzels. Anything that you want to make that is a dough works perfectly with this. I used to knead everything by hand but not anymore. If you have any interest in baking or cooking keeping an eye out on Craigslist for a mixer is the best thing you can buy!

The ingredients are pretty specific, but don’t let them intimidate you. This recipe is from Alton Brown so you know it has to be good!

Ingredients

  • 1 1/2 cups warm (110 to 115 degrees F) water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 22 ounces all-purpose flour, approximately 4 1/2 cups
  • 2 ounces unsalted butter, melted
  • Vegetable oil, for pan
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Pretzel salt

If this seems like something you think you can make you can go to foodnetwork.com for the complete instructions to make this. They are completely worth it! You can also use cinnamon sugar instead of salt if you prefer. A quick tip: whenever you are putting the egg wash on the pretzels, make sure you don’t get any excess on the cookie sheet because it will burn and be difficult to clean up.

Cajun Chicken Pasta can be made with any kind of pasta you want!

This is one of my favorite recipes. My boyfriend is really picky about his foods and this seems to be the only thing I can make that I don’t have to alter to get him to eat.

The ingredients are…

  • fettuccine (about half a box)
  • 1 stick of butter
  • 1 small onion
  • 2 cloves of garlic
  • 1/2 cup of a parmesan cheese, or a mixture of cheeses if you prefer
  •  1 tsp salt
  • 1/2 tsp pepper
  • a whole chicken
  • 1 pint of cream
  • 2 tsp Cajun seasoning
  1. Your first step is to season and get the chicken in the oven. Preheat the oven to 375 degrees and remove the chicken from the plastic and remove any of the, for the lack of a better sounding word, organs the packaging companies leave in there. Set the chicken in a baking dish and cover the chicken with the Cajun seasoning and place it on the center rack in the oven. It’ll take about an hour and a half to cook.
  2. While your chicken is in the oven, you’ll work on making the sauce. Get a medium size pan warm and melt your butter. Chop your onion and garlic and add it to the melted butter for about 5 minutes until they get soft.
  3. Once this happens, add all the cream, and this is where you have to put a little bit of work into it.
  4. When the cream gets warm, NOT HOT, gradually add the cheese and continuously mix with a whisk.
  5. You can turn up the heat a little bit, but not much. (not passed 5 or 6 on your stove) This step is really important because this is where the sauce starts to thicken and if you don’t whisk it for at least 15 minutes, your sauce will be gritty. It’ll be worth it.
  6. After about 15 minutes of whisking, taste the sauce to see if all the cheese is dissolved and add the salt and pepper.
  7. You can keep the sauce warm and set it on a back burner on low until you’re ready to eat.
  8. Now you need to get a pot of boiling water to cook your pasta in. Follow the instructions on the box, but be sure to add some salt to your water.
  9. If you can multitask you can make your pasta while you’re making the sauce, I just know the sauce gets tedious.
  10. When the pasta is finished you can drain it and mix it with your sauce.
  11. After your chicken is finished, you can let it sit for about 10 minutes to rest and slice the chicken however you desire and mix it with the pasta and sauce.

Just 3 Ingredients!

This is one of the simplest desserts to make and with only three ingredients anyone can make it.

You’ll need…

  •  One package of oreos
  •  a package of chocolate chips
  •  6 ounces of cream cheese

You’ll also need these supplies..

  • 2 bowls (one small and one large)
  • a cookie sheet
  • spoon
  • a medium pot
  • food processer (optional)
  • double boiler (optional)
    1.  Crush the oreos, in whatever way is easiest for you. Food processor is best, if you have one, and if you don’t you can just use the spoon to crush them in the large bowl.
    2. Next you mix the crushed oreos with the cream cheese until completely combined. The next step is important, roll the mixture into balls and freeze them on a cookie sheet. This helps keep the mixture together when you mix it into the chocolate which brings me to the next step.
    3. Melt the chocolate chips in a double boiler, if you don’t have a double boiler you can place a ceramic bowl filled with chocolate chips over a pot of boiling water.
    4. Next, you roll the frozen balls in the chocolate until they are completely covered, then set them back on the cookie sheet and back in the freezer.

On average it should make about 2 dozen

Three easy steps to improve a boxed cake mix!

Okay guys, this is a way to improve a regular ol’ box cake mix like Duncan Hines and Betty Crooker. Instead of following the box instructions, which may vary depending on the cake mix you buy, you just alter the ingredients a bit.

The recpie will call for a specific  amount of oil, water and eggs.

  • Instead of using oil, substitute equal parts butter.
  • Instead of using water, use equal parts milk:
  • Finally, however many eggs the recpie calls for, use two more. This will make the cake much richer and more dense like a cake you would get from a bakery.

The cook time and temperature are the same as the instructions on the box. I found this tip on Pinterest a while back and you can also find a lot more great recpies there aswell!
